Crispy Pork Bowl

This rice bowl features leftover pork fried in sesame oil to add depth and texture.

I’m not sure where I first read about the technique of frying already-cooked meat, but it’s one I use frequently. The idea is simple: Just toss some diced chicken, pulled pork or shredded beef into a nice hot skillet with a little oil and cook, allowing the meat to crisp and caramelize in places. It’s a fantastic way to breathe new life into leftovers and create an interesting contrast of texture.

You can top the pork bowl with any vegetables and toppings you like. For this bowl, I used sauteed red cabbage and leftover pickled vegetables from making these summer rolls. Steamed broccoli, sauteed onion, or raw chopped spinach would all be great toppings.

Crispy Pork Bowl

This rice bowl topped with crispy pork is the perfect vehicle for fried egg, leftover vegetables and any thing else you can stir fry!

Ingredients

  • 1-2 tsp sesame oil
  • 4 oz cooked pork, shredded or chopped
  • 1 serving cooked rice
  • ¾ to 1 cup vegetables, such as:
  • -Spinach, kale or cabbage sautéed with garlic and ginger*
  • -Steamed broccoli or carrots
  • -Quick-pickled vegetables
  • 1 egg
  • Soy sauce, to taste
  • Sriracha or chili paste, to taste

Instructions

  1. Heat a small skillet over medium-high heat. When hot, add the sesame oil.
  2. Saute the pork in the sesame oil until it begins to crisp and caramelize in places.

  4. Add the pork and sauté for a few minutes until the pork is hot and crisp, caramelized spots begin to form.
  5. Meanwhile, reheat the rice and vegetables. Cook the egg, if using.
  6. Place the rice in a bowl and top with the pork, vegetables and egg. Season to taste with soy sauce and hot sauce.
