What’s in the Box? July 20 Edition

Serendipity is the theme of this week’s box. I’m cooking for myself most of the week because Paul’s off teaching band camp, so I thought it might be difficult to use up an entire box of produce mostly by myself. But fortunately, it was one of those weeks where the stars aligned, and the box ingredients I received closely matched what I needed for recipes I’d seen recently!

July 20 Delivery

The haul:

  • 1 pint blueberries
  • 4 peaches
  • 2 zucchini
  • 4 tomatoes
  • 3 ears of corn
  • 1 onion
  • 1 pint green beans
  • 1 cucumber

What I did with it:

Half the blueberries were destined for Smitten Kitchen’s very blueberry scones, which we ate for brunch on Saturday and Sunday. The rest were snacks, as were the peaches.

The zucchini were spiralized and made into a zoodle salad with three of the tomatoes.

The remaining tomato went into a batch of shrimp gumbo for one.

I’ve been wanting to try making Food Wishes’ “Just Corn Soup” recipe, and I received exactly the amount of corn I needed!

The onion was on the small side and therefore perfect for a batch of falafel (joining last week’s cucumber).

 I stir fried the green beans until charred and then tossed them with a mixture of hoisin and water until reduced. They were a delicious side with turkey larb and brown rice.

 The cucumber…well, I’m still working out what to do with it. It will likely get diced up for salads or sliced for snacks throughout the week.
